A chef, a farm and a table

Here at The Munching Mongoose we’re on a journey to live happier, healthier and more sustainable lives, and we are so glad to have you on this journey with us. By supporting local, ethical farmers and suppliers and eating more seasonally, we are on our way to living a more sustainable life that is mindful of others and of the environment, and that undoubtedly makes for a happier, healthier bunch of people! And we love meeting other people and companies who are on the same path as us. This week, we shine the spotlight on local chef, James Diack, and his family of restaurants, all focused on sustainability, seasonality and food provenance.

Food provenance means to know the origin of your food – knowing where it’s come from, how it was produced and how it found its way onto your plate. And this philosophy is at the heart of Coobs, The National and The Federal, 3 of the best restaurants in Joburg, run by Chef James Diack. Diack gets his inspiration from his family run farm in the Magaliesberg, Brightside Farm, which is not only where he grew up, but also the primary supplier for all 3 of his restaurants. From herbs, vegetables and fruit, to lamb, duck, and his legendary acorn-fed wild boar, the restaurants get 95% of everything on their menu from Brightside Farm. And did we mention that the farm is run using only organic methods, making for happier and healthier animals, plants and people. It doesn’t get better than this.

Oh but it does, because the food is absolutely delicious, and you can’t help but taste the farm on every plate. From the delicious roast chicken and seasonal veggies at Coobs, to the Asian pulled pork salad from The National, all three of the restaurants offer something different, but with one thing in common – seasonality. And beyond that, the restaurants form part of the wonderful and harmonious Brightside circle. The egg shells from the restuarants find their way into the soil on the farm, and all edible waste is enjoyed by a happy bunch of pigs!

We are inspired by Diack, his beautiful farm, and his family of restaurants, and we thought it only fair to share that inspiration with you. In case you missed it, it’s our birthday month (Happy 3rd Birthday Maningi!), and what do you know, but it also happens to be a birthday month for The National! Coincidence? We think not! And so we thought we’d have a little competition, where you could win a R1000 voucher towards a delicious meal, courtesy of The National, in Parktown North! Thanks to Diack and his team for their generosity, we can’t think of a more delicious and sustainable way to celebrate both our birthdays! Diack talks about The National as a “home-away-from-home, with a menu that features a delicious array of smoky Texan, South American and other flavourful dishes to provide rustic comfort to any palate.”
